Vibrant Vegetable Medley (serves 4)
This is an unusual mixture of vegetables as some are cooked but cold and some are just as they come and the secret ingredient is Creole seasoning.The sweet potato, cherry tomatoes and garlic are roasted. The avocado, red onion, cilantro and black beans are raw and when all the veg. are combined in a bowl (once roasted veg. have cooled) lime juice is poured over (keeps avocado green as well) and makes for a very colourful dish. I squished the tomatoes so their juices ran into the veg. Think this could be a salad or a side dish.
**Little known food fact**
Something I thought I would pass along – garlic can be shipped to the US from China where it is grown in human poop! I am sticking to home grown from the farmer’s market. It tastes so much better as well. I will be drawing your attention to other food facts as I discover them – good and bad.
1 tbsp. extra virgin olive oil seasoned with salt and freshly ground pepper
1 sweet potato – peeled and cut into chunks
3/4 dry pint cherry/grape tomatoes
2 cloves garlic – finely chopped
1 x 15 oz can reduced sodium black beans – drained and rinsed
1/4 of a red onion – finely chopped (I like red onion but you can use less)
1 avocado – diced
1/2 tbsp. cilantro – finely chopped
Juice of 1 lime
1/4 tsp. Creole seasoning (whatever you use for blackening fish)
Place seasoned olive oil in a mixing bowl.
Add sweet potato, tomatoes and garlic and toss well, then place in a roasting dish and roast for half an hour or so until sweet potato is cooked and tomatoes are bursting.
Squish the tomatoes a bit so that juices run out and let cool.
Combine black beans, red onion, avocado and cilantro in a bowl.
Pour over lime juice.
Add Creole seasoning.
Mix well together then add cooled veg. and mix again.
