Tricolor Melon Salad (serves 4 )

Utterly refreshing. Take three types of melon – watermelon, cantaloupe and honeydew – add lime juice and serve. Leave for a little while for the melon slices to meld with the lime juice. Can be breakfast, taken on a picnic or a summer dessert.

8 oz. each of watermelon, cantaloupe and honeydew melon – cut into small chunks.
Juice of 1 lime
Zest of half a lime

Place the melon chunks in a serving bowl. Pour over the lime juice and stir well. Leave for half an hour covered and outside of the fridge so the juices mingle. Place in the fridge until serving. Sprinkle with lime zest before serving.
