Beetroot with Horseradish Sauce (serves 4)

 

The taste of fresh beetroot is much earthier than the canned kind. It goes really well with horseradish. I made two different kinds of horseradish sauces  to mix in with the beetroot – horseradish and mayo or horseradish and almond milk. You just mix the two ingredients together until you get the right taste and quantity that suits you. You can mix the sauce with diced, cooked beetroot or you can puree it in a food processor. I used Gold’s Prepared Horseradish. It goes well with smoked mackerel or cold beef or can stand alone .

 

3 x beetroot, peeled and diced

 

Cook beetroot for 15 minutes until just tender.

When cool toss in horseradish sauce.
