Black and Green Chicken Salad (serves 4)

Very simple to prepare – I bought a pre-cooked chicken from the supermarket and added some black beans, chopped celery and chopped scallions. Experimented with the mayonnaise dressing as I like a thin dressing. I diluted the mayo with chicken broth and it tasted very nice. I am thinking of serving this mixture in 1/2 an avocado per person.

 

2 x pre-cooked chicken breast, cut up into small pieces

1 oz chopped scallions (can use green part too)

2 sticks of celery – diced

7 oz canned black beans – rinsed and drained.

Salt and freshly ground pepper

2 dessertsp. mayonnaise (I really do like Hellman’s, having tried other varieties)

2 dessertsp. chicken broth

 

Place cut up chicken in a serving bowl, add scallions, diced celery and black beans.

Season with salt and pepper.

In a small bowl combine the mayo and broth and whisk till smooth.

Pour over salad and toss.
